Eggs

There are a lot of eggs in keto-bread, usually half a dozen. Make sure to separate the yolks from the whites. This allows you to beat the egg white nicely until it becomes a fluffy whole. By whipping it gently you get light and airy bread.

Baking powder

Keto-bread contains about 3 teaspoons of baking powder. This ensures that the keto-bread rises nicely and retains its airy composition.

Sweetener and salt

Normal bread often is sweetened with sugar, which doesn’t bode well with a healthy diet. Instead, keto-bread opts for an alternative sweetener, usually Stevia. To enhance the taste of the bread, you can add a hint of Himalayan salt.

Butter

Butter adds flavour to the bread and ensures that it tastes wonderfully creamy. If you would prefer a dairy-free alternative, you can opt for coconut or avocado oil.

Gluten-free flour

There are many types of flour to use as an alternative to grains and wheat. In principle, nothing else changes in the baking process. Almond flour

Buckwheat flour

Can I substitute ingredients?

You can put keto bread together entirely according to your wishes and preferences. From the different types of flour for flavour, to the array of sweeteners for taste, you can build your keto-bread to your preference. You can also consider replacing the butter with coconut oil, avocado oil or ghee.

To give the bread a spicy or spicy taste, you can add ingredients such as garlic powder or cumin seeds. You can also finish the bread by sprinkling a crispy layer of nuts or seeds over the bread, such as sesame or poppy seeds. This completes the bread giving it a delicious bite.

Ingredients

  • 5 tbsp ground psyllium husk powder
  • 1¼ cups almond flour
  • 2 tsp baking powder
  • 1 teaspoon sea salt
  • 1 cup of water
  • 2 tsp cider vinegar
  • 3 proteins
  • 2 tbsp sesame seeds (optional)

The basic keto bread

The keto bread has a pleasant crispy crust with a soft moist centre. It’s bread—you know what to do. Enjoy it warm straight from the oven, or freeze to later thaw and toast to perfection.

Instructions

  • Preheat the oven to 175°C.
  • Mix the dry ingredients in a large bowl. Bring water to a boil.
  • Add vinegar and egg white to the dry ingredients and mix well. Add boiling water while whisking with a hand mixer for about 30 seconds. Do not mix the dough too much, the structure should feel like play-clay.
  • Moisten hands with a little olive oil and shape the dough into 6 separate rolls. Place them on a greased baking tray. Top with optional sesame seeds.
  • Bake on the lower rack in the oven for 50-60 minutes, depending on the size of your buns. They are ready when you hear a hollow sound when you tap the bottom of the bun.
  • Serve with butter and topping of your choice.

Ingredients

  • 1 large egg
  • 1 tablespoon milk
  • 1 tablespoon olive oil
  • 1 tablespoon coconut flour
  • 1 tablespoon almond or hazelnut flour
  • ¼ teaspoon baking powder
  • Pinch of salt

Optional add-ins:

  • ¼ cup of grated cheese
  • 1 tablespoon chopped spring onions or herbs

Keto bread in 90 seconds

Instructions

Whisk the egg, milk, oil, coconut flour, nut flour, baking powder and salt together in a small bowl. Add the cheese and scallions or herbs if desired, and stir to combine.

Pour into a large microwave-safe mug and tap the bottom of the counter firmly a few times to make air bubbles rise and pop. Microwave for 1 minute, 30 seconds on high heat.

Invert the mug onto a cutting board and let the bread slide out. Cut crosswise into 1,5-2,5cm thick slices. To toast, heat a teaspoon of oil in a small skillet over medium heat until shimmering. Add the slices and roast until golden brown, about 30 seconds per side.
